I'm having problems getting SNMP to work correctly. An snmpwalk outputs:

However, I'm trying to get the interfaces to be monitored as well. Can someone who has the interface part of cacti working please post your snmpd.conf file? I think this is where my problems are coming from.

The default snmpd.conf restricts queries to the "system" subtree. Try changing the value to ".1":

# incl/excl subtree mask
view all included .1

I get the same thing with my redhat installations untill i configure it correctly.

Run snpconf -g basic_setup and follow the prompts.
